Chiayi is located on Taiwan's western coast, has a diverse landscape which starts in low-lying coastal plains and gradually rises towards the famous Alishan mountain range. The coastal land is as low as 60m above sea level, while Alishan reaches just above 2,000m. Alishan high mountain tea, is cultivated in Shizhao areas at an altitude of 1300- 1700 meters or above. Alishan has high levels of precipitation throughout the year which supports rich agricultural and natural biodiversity. The altitude and mountain mist provide the low temperature and proper humidity to allow the leaves to develop slowly and remain tender. Young tea shoots are picked by hand and then undergo a special processing method. Partially oxidised and lightly roasted, Alishan tea is characterised by its semi-spherical shape and pleasant fragrance. In this area they also producing rice, pineapples, and citrus. The varying climates support diverse vegetation, including bamboo, palms, and tropical evergreens in lower areas, while higher elevations are home to cypress, red pine, spruce, and fir trees.

  • Ambience

Leaf: Tiny and sleek, tightly compressed light green pearls releasing a fragrance of hyacinths blossoms, spice and baked scents.
Infused leaf: A little unfolded leaves and buds opens up a persistent sweet herbal aroma, sticky fruitiness and a little spice.
Liquor: Cup is bright and clear, the colour of warm hay. Aroma is very floral, hyacinths, honeysuckles, orchids. The light smooth and complex mouthfeel is sweet and fruity. Notes of baked pears, peach & honey is followed by milky almost creamy texture. This exquisite Alishan tea has only a little astringency and no acidity.
